OMWC and Spud are having such a great time that Spud forgot the website even exists, let alone that he was supposed to be doing anything about anything.

So, here’s an Open Post for your enjoyment. Or your derision. Or whatever. I’m not in charge of you.

    Carried over from previous thread:

    Jean (Wong Toy Jin) Lumb’s method, which she taught to a dumbass ten-year-old kid (me) back at her signature Kwongchow Cantonese Restaurant in Toronto in 1968:

    The vast majority of rices cook best with a ratio of 1 part rice to 1.5 parts water. This is the ratio used for “steamed rice” in most Chinese restaurants and families (it’s actually boiled and then simmered, but “steamed” somehow became the standard name for the method).

    Place 1 part rice and 1.5 parts water (by volume, please) into a pot. Unless you suspect the rice to be inadequately cleaned, no need to wash it. (In fact, if you like eating with chopsticks, not washing the rice allows the starch to cause the rice to clump together, which makes chopstick eating easy). Bring to a boil, and then turn down to a simmer, starting your timer at 20 minutes the moment it starts boiling. When you achieve a simmer (approx. 1.5 – 2 minutes later), cover and leave alone until your timer goes off. Then turn off the heat and let the rice sit for another 10-15 minutes (the longer time should be used for rice quantities above 1 cup of raw rice). Then uncover and serve.

    Brown rice uses exactly the same ratios, but requires almost 45 minutes of simmering (the bran covering the rice won’t “crack” until almost 25 minutes after starting the boil/simmer, at which time the hot water can finally reach the inner starches of the rice). Then let sit off the heat as above, uncover and serve.

    N.B.: If you’re using Uncle Ben’s brown “converted” rice, the timing is the same as for white rice, because the Uncle Ben’s is par-cooked to the point that the bran is pre-cracked.

    You can certainly add salt, a small splash of lemon juice and/or a small pat of butter at the beginning of cooking time, if that’s how you wanna roll. You can also use flavoured broths.

    “Steamed” rice is so simple, even the 10-year-old dumbass could do it.

        I’ve told this story before, but it bears repeating, mostly because it shows the power of entrepreneurship and guile:

        In order to make her restaurant a success, Jean Lumb had to scour the world for good Cantonese chefs (for awhile, her restaurant achieved a five-star rating as the best Cantonese restaurant not only in Toronto or Canada, but throughout North America). Her favourite move was to fly to Hong Kong at least once a year and raid the Repulse Bay Hotel of its finest chefs. Staff at the hotel used to dread seeing her walk in the door, and she was successful in luring their best chefs away from the hotel and to Canada more often than not.

        Sadly, Jean died in 2002, and the Kwongchow closed much earlier than that. It was a formative experience for me, and taught me that food from all over the world could be exceptional, not just “okay.”

        Wherever she is, I hope she’s eating well right now.

        And man, could she shmooze! My family was plugged into the Liberal Party of Canada back in the day, and Jean Lumb knew everybody that was anybody at the federal level. All the movers and shakers ate at her restaurant, and did deals there after closing time.

      I cook my rice that way, but have always done 1:2 rice to water. Will try 1:1.5 next time. Just got a nice smoked ham hock at the butcher today. I’ll make beans and rice next Sunday, with that ham hock and andouille sausages. And bacon.

        Yeah, that ratio’s printed on every freakin’ bag of “white folks’ rice” I’ve ever seen. The 1:2 ratio has always produced rice that, to me, seems extraordinarily soft, almost water-logged. I s’pose it’s okay if the final destination’s a rice pudding or somesuch.

        Y’know, you’re right about that. I might try this ratio with the Alton Brown method described earlier, tonight. I like it with the Sauerbraten I have.

        I know I’ve used both ratios, just never bothered to note which one was better. I’m a slow learner in the kitchen.

        The ratio goes down the more rice you cook, starting at 1:2 for a cup, down to 1:1.5 or so for a quart. The larger the quantity the less water is lost due to evaporation.

      I cant recommend these highly enough. Catbutt me if you want but they are insanely cheap, fast and easy to use. I cant tell the difference between the results with this cheat and the long, old fashioned method.

      2 cups water
      2 chicken boullion cubes
      1 cup rice- I use basmati because the grains are stiffer, less mushy
      1-2 tablespoons butter
      hefty dash of sweet basil

      Microwave on high for 15 minutes.
      While the rice is in the oven you can go about other food prep.

      Another nifty trick: In a large skillet put two chicken leg quarters, 1 cup rice, whatever seasoning mix you like (onion, bell pepper, celery), a couple of bullion cubes, and two cups water. Season as you like with pepper, garlic, whatever. Bring to a boil then turn to simmer and leave covered for an hour. Cooks the whole chicken and rice meal at once.

        In a 2 cup glass measuring cup put 1/2 stick salted butter
        Microwave on high for 15 seconds
        Check the butter, it will be partially melted
        Microwave again for 7 seconds
        Check – you are looking for melted butter with the bottom of the measure cup just a little warmer than body temp
        Microwave in 7 second increments checking between until that is achieved. You can use shorter times if needed.
        Toss in two egg yolks and begin whipping. Toss in 1 to 1-1/2 tablespoons of lemon juice along with a pinch of allspice and a pinch of salt.
        Whisk and whisk and whisk. If it looks broken, it isn’t….keep whipping. When whipped enough it will suddenly turn perfectly creamy and the right consistency.

        If after you have added the yolks and lemon juice and started whipping it still seems too much liquid you can return to the microwave 3-7 seconds at a time. Once you get the hang of this method you can make perfect sauce in 2-3 minutes.

        I don’t own a microwave but when I did it was way to small to fit a body. One would have to cut it up to microwave at 7 sec intervals.

        I don’t think I believe this (I’ve always made my Hollandaise sauce in a double boiler), but I’m gonna try it. I’m seriously looking forward to being proved wrong.

        The Joy of Cooking has a recipe for making Hollandaise sauce in a blender:

        3 large egg yolks
        2 tsp lemon juice, or to taste
        ground white pepper, or hot red pepper sauce to taste
        salt to taste

        process on high for one minute. With machine running, add in slow, heavy stream 1/2 cup very warm to hot clarified butter.

        By the time all the butter is poured in – about one minute – the sauce should be thickened. Taste and adjust seasoning.

        Similar to yours, Suthen. I’ve never tried allspice. That seems very interesting.

      Instant pots make excellent rice cookers. I especially like mine for brown rice, or mixed brown and wild. Cuts way down on cook time and comes out perfect.

      Well, I know for a fact that many bottles of excellent wine are being consumed this weekend, and probably some so-so wine, as well. Maybe even some downright terrible or corked wines, too, although I expect a corked wine would only get one sip before being dumped.

      Gohan is cooked rice or it can also mean a meal since a meal generally contains rice.

      Kome is raw rice.

      And raisu is also used. From the English word rice.

      Rice IS the meal the sides are called okazu and would be things like fish and vegetables.

        Less so this week, Stock seemed normal, but two shopping trips ago when I was looking for more pickles, all I could get was halves, everything else was gone, and the week before that were none. That and cleaning products seem to be the only remaining holes in the Kroger. Paper products are back including brands, though most of the shelf space is still some generic I’ve never heard of. I gather that’s the factory pumping out average TP and plain wrapping it for everyone (and/or Mexican – we do have some mexican brands plugging holes, like for bleach, as well).

    Just got back from dining out by a lake. Main restaurant closed but patio open for eating.

    We passed a small tent with a few volunteers registering people to vote and selling pro Trump T-shirts and caps. Haven’t seen anything pro Biden yet, but this is Commiefornia so Dems don’t need to try.

    Does this mean that a very mild course of the pandemic was not even considered from the start? At any rate, efforts to downplay the risks were unwelcome, and the WHO made it clear that it preferred to base its decisions on a worst-case scenario. “We wanted to overestimate rather than underestimate the situation,” says Fukuda.

    Phase 6 acted as a switch that would allow bells on the industry’s cash registers to ring, risk-free. That’s because many pandemic vaccine contracts had already been signed. Germany, for example, signed an agreement with the British firm GlaxoSmithKline (GSK) in 2007 to buy its pandemic vaccine — as soon as phase 6 was declared. This agreement could explain why Professor Roy Anderson, one key scientific advisor to the British government, declared the swine flu a pandemic on May 1. What he neglected to say was that GSK was paying him an annual salary of more than €130,000 ($177,000).

        The PA constitution requires concurrent resolutions, exception for resolutions about adjourning the General Assembly, to go to the governor for his approval/veto before they have legal effect. A veto can be overridden.

        There is no such requirement in NH that I know of.

      I imagine it has always been that way somewhere in the country. I have never seen the country so polarized in my lifetime but I am guessing it was about the same during the civil rights movement and before the civil war.

      In 1980, 66% of Californians were white. In 2010, it was 40%. The Republicans cannot win a majority minority district. You can argue why exactly that’s true, but it is true. It has been the deliberate policy of the Democratic party to encourage immigration from Latin America because it gives them more voters.

      Meanwhile, the Republicans give speeches in Spanish and talk about how “Hispanics are Catholics with strong family values, they are a natural Republican constituency!!!” as seen by all the constitutional, free market, limited government republics all over Latin America.

        Bottom sirloin. Triangular-shaped portion of the muscle (hence “tri-tip”). Difficult to find in Canada, I have to order it as a special cut from a local butcher.

        We’re having a barbecue this evening (with exactly 10 people in attendance, don’t want to go against Newsom!) and three big tri-tips are going on the grill once the guests are well saturated with cocktails.

        Tri-tip is awesome. I’d never heard of it either before moving to CA.

        It’s a great cut of meat. The butcher in the farmers market usually has good sized ones ~ 2-2.5 lbs average.

        Grill for 4 minutes direct high heat, flip & repeat.

        Flip & rotate ~ 8 minutes indirect heat @ 375

        Flip & rotate. Check temp. Pull when fat end checks at ~ 125.

        Should be right there for those times on a good size cut.

        Do not use any moist cooking techniques, or it will taste like coffee grounds.

        I hate ruining a steak. Especially since I could sear a steak at 700 degrees for 2 minutes on each side, fling it at my wife, and she’d eat it like a starving tiger.

    I had breakfast at a food truck this morning. Supposedly one of the best in the local tri-county area. I had a sausage breakfast burrito with green chili. List price was $8.75. It was ok. For nine bucks I want the best damn burrito I have ever had. I can make the best damn burrito I have ever had for about $1.50 worth of ingredients. If I wasn’t such a slack ass I would quite my job and be selling burritos for $9 each. Not that I would charge that. That is a stupid price and not one I would pay.
