Some state government public health officials and the CDC are making noise about going back into lockdown during the upcoming flu season. If a bunch of people panic again, the store shelves may be a little bare. So, it may be smart to stock up now and get your pantry recipes ready. Hyperbole, get your pickles now.
Looking through my cupboard I found a jar of green salsa. That’s what started me thinking about pantry meals. Salsa is a favorite pantry staple of mine and reminded me that someone had posted a salsa chicken recipe in the comments.
I make a similar crockpot recipe. I usually cut a pork roast into cubes, brown and put in the crockpot along with chopped onions and chopped green bell pepper. Then I pour in a jar of green salsa. Cover and cook on low for 6-8 hours. You could also use boneless skinless chicken thighs or beef stew meat – whatever you like. You can eat it as is, serve over rice, or turn it into a filling for tacos or enchiladas. Easy, tasty and versatile.
In my grad school days, I used to mix chunky salsa with tuna to make a spicy tuna salad. I ate it in sandwiches, as a salad on lettuce, or just on crackers. I keep salsa on hand because it is a quick, cheap way to make otherwise boring staples taste good. And, of course, you can just eat it on chips.
Another pantry meal I like is chicken with artichokes. I dredge bone-in, skin-on chicken thighs in seasoned flour, then brown in a skillet in a little oil, remove them from the pan and set aside. Then I add chopped onions and sauté until translucent. Drain a can of artichoke hearts and cut into quarters. Add to the onions along with a little white wine and chicken stock. Return the chicken to the pan and bring to a simmer. Cover and cook for about 25 minutes. Then add a cup of frozen peas, cover and cook for another 5-10 minutes. Yum! I once used a jar of marinated artichoke hearts instead of canned. It worked just fine.
Thinking about salsa and jars of artichokes reminds me of one of my favorite kitchen tools. I never struggle to open a jar because I have this opener.

For years all I could find were those stupid rubber mats. That’s fine if the problem is that the jar is slippery but is worthless if you actually need help breaking the seal. (Yes, yes SQUAT MOAR, whatever.) I was thrilled when I finally found one for 75 cents at a yard sale.

I’m not rich, I don’t have a pantry. (well, I so rarely eat at home that keeping dry goods around doesn’t make much sense. Not that I’m a rich folk who eats out (Phrasing!) all the time, just I usually eat once a day and I tend to cook Fresh-Frozen-Canned in that order.
I like to keep stuff around where I can whip something up, so VERY basic items like flour & yeast & sugar. I also like to keep lots of juices & fruits like citrus around. Can use them in baking, cooking, and drinking. Also, booze.

My cast iron is my true workhorse in the kitchen. The girlfriend hates it all because she says it’s too heavy.

What problems are you having with cast iron? I’ve got some enameled cast iron and a bunch of regular iron.
I’m impatient. Waiting for it to heat up or cool down always irked me. It was perpetually in the wrong thermal state.
That I can’t offer any advice on. I plan things out when cooking, and even do the fancy french words for prepping all the ingredients before starting any cooking (and usually pre-heat the cast iron while getting that set up).
Induction. Ours gets the cast iron smoking hot in under a minute.
I like cooking with my cast iron, but I hate cleaning it & caring for it. I often fry in it, and disposing of the oil then cleaning the dregs is a PIA. It’s like a delicate snowflake that needs copious amounts of attention, and dog forbid it gets wet for any length of time.
I like my stainless Cuisinart pan because other than it not being nonstick, it can do everything the cast iron can do, AND it goes in the dishwasher.
I can’t be arsed to find it, but there’s a meme where a husband is holding an immaculately cleaned skillet and the caption is, “My wife’s pan was totally crusted and filthy.” And it’s a cast-iron pan.
Plus I can boil water in it and use it to cook acidic sauces & foods
I wash mine in the sink with the other dishes and use it for acidic sauces all day long. Once it has a good seasoning build up, it really doesn’t matter. Just don’t clean it with steel wool or soak it for more than 15 minutes.

These newfangled rules for cast iron are just that. It can get wet, you can soak it etc.

Have you had either the Mrs. Renfro’s Ghost Chili or Carolina Reaper salsas? I can get the Ghost Chili one here locally, but it seems to have been ‘watered down’ the past few years, and I read a review where the Carolina Reaper salsa is just barely hotter than the new ‘watered down Ghost Chili salsa, so debating if it’s even worth it to pay the premium to buy it online.

My pantry has lots of canned Ro-tel Mexican style tomatoes to make my own salsa by mixing the different Ro-tel products with onions, Jalapenos, etc. Another staple in the pantry is pinto and black beans. I always have a batch of frozen refries on hand which I heat up and use as required. No Effing canned refried beans in my house.

Mmm… I would sit there and sip coffee and eat a half dozen peanut butter on raisin-toast sammiches for breakfast. Our mess ranged from mediocre to pretty good, but they made up for it with volume.

This weekend will include a roast chicken in a cast iron skillet.
Growing up I thought roasted chicken was fine, but my grandma and mom’s way of doing it resulted in wet, floppy skin.
Now my wife sears it in the cast iron before throwing it in the oven. It basically results in a roast/rotisserie chicken hybrid that we make every week. The leftover chicken is used in another dinner later.
The other key is to make a compound butter and rub it under the skin and over the skin. And then make a pan gravy in the pan with the drippings.
By that you mean put a stick of butter in the body cavity, a stick of butter on top of the body and regularly baste with beer? If not, you are wrong.
For a small chicken, I’ll generally use about a stick of butter (there’s only two of us in the house). In Thanksgivings past, I’ve gone through several pounds of butter through the turkey and sides.
I won’t baste the chicken, as it doesn’t really need it, and I prefer to keep my oven closed when cooking. But I have used beer as the deglazing liquid for gravy before (especially a nice wit with notes of lemon and coriander).

As for bunker pantry food, I’d recommend a ton of long grain rice and a lot of light, salt based sauces (mandarin, worcestershire, tso, curry based, soy, etc.), to go with it. Neither of those things easily expire and whenever I have a lot of random people at my table it’s always and easy side dish, just a light dust of steak seasoning and a ton of butter.
Protein: Albacore tuna (white,) never in oil. Canned salmon. Smoked oysters. 1$ Chili with beans.
Fruit: Pineapple, fruit mix, pears, mandarin oranges and peaches. I think cherry pie filling technically counts here.

What’s particularly troubling about the return of COVID in Italy is that the country has done everything experts like Dr. Anthony Fauci have been advising. Face masks in public places have been compulsory for months, social distancing is strongly enforced, nightclubs have never reopened, and sporting arenas are at less than a third of capacity. Earlier this month, Hahn ended a lengthy standoff over the rules under which the FDA would grant emergency authorization for a vaccine by flouting the White House and ordering their publication. The move won widespread praise from the nation’s public health community.

We’ve been stocking the pantry using Aldi’s and Costco. The wiped-out shelves and food lines earlier this year was a reminder to me that ammo isn’t the only thing I should be stockpiling.
I’ve been buying 18 lbs of rice and 16 lbs of pinto beans at a time from Aldi, Then send the wife in to do the same. Every order from Costco gets tuna, canned chicken, and jars of peanut butter added. Plus the 20 lb bags of Basmati. Not pantry-food, but we’ve also been putting away OTC medications, bleach, soap, and tp.
If we don’t face food shortages again, I’ll spend a few bucks to store the rice and beans in buckets with an oxidizer that should last a few decades.
What do you use as an oxidizer?
You can buy them cheap on Amazon. Or they are often included with mylar bags if you get these to line the buckets.

Salsa? I have a recipe from BeerAdvocate for a spicy pork stew. The liquid is a salsa and beer, plus enough water to cover everything. The salsa is tomatillos, hot sauce, a mix of peppers (pablano and jalapeño if I remember correctly), onions, and cilantro. It’s quite tasty, though folks that don’t like cilantro will disagree.
