What a f***ing week. I’ve eaten like a pig. I must admit, leftover Tofurkey and baked potato is pretty good. Suck it meat eaters. *Accepts his knighthood from SP.*
I completely wimped out of going to the gym Wednesday morning. The alarm went off, I checked the weather on my phone, and discovered it was 37 American degrees. I just was not going to go squat in near freezing weather. I should have. It probably would have been fine. But my 55-year-old ass pictured a less than great warm up followed by an avoidable injury right before Thanksgiving. So, back to sleep I went.
I did manage to go to the gym on Thanksgiving. I don’t know if things changed or I just noticed it, but masks were few and far between. You must wear one to enter and the people manning the entrance wore them. But 80% of gym goers either didn’t wear one at the equipment or used it as a chin strap. Even more interesting, I didn’t see a single trainer wearing one. It makes perfect sense. We are outside. I felt free setting mine down and getting to it.
It was pretty damn windy outside. On the one hand, working out outside is great. On the other hand, I would like to be in the gym sheltered from the elements. Who am I kidding? I only want to work out outside when I choose too. I hate my governor.
I am glad to see some gym owners are fighting back. I just assume Tundra is responsible for this.
I about lost my shit when I read this and watched this (h/t Café Hayek). I am not a scientician so I may be too stupid to make my own decisions. But if I am getting this right, we already learned transmission from surfaces is exceedingly rare (maybe unknown.) The major dangers are age and comorbidities. Age we can’t (yet) control. Comorbidities that are linked to lifestyle we can. It now appears our national death toll may not be elevated, and all the lockdown measures are unmitigated bullshit. So, our power hungry, risk averse, politicized science loving overlords proclaimed let’s close the gyms or make it so unpleasant to go that fewer people do.

I finally peeked at the bathroom scale again.
I’m up a few pounds vs 2 weeks ago, but I’m not too discouraged; for me, a new few pounds can be evicted pretty readily. The new lbs ain’t even payin’ rent yet.

PS homemade mashed potatoes with Kerrygold butter and heavy cream is totally worth it.
So was the low-carb chocolate cheesecake I made in the instant pot.

I’m sure I gained some weight this week. Meh, I was gaining before this week, too. The scale is going in the opposite direction of how I feel. I feel fitter and higher energy. I worked out 2x this week, and excepting yesterday, I’ve been active the rest of the week.
Eventually the scales will turn, but I think I’m putting on more muscle than losing fat right now.
All that said, I’m taking over the food side of things starting this week. Low carb (not keto), here we come!

For most people, keto really isn’t. A therapeutic keto diet is high fat, low carb and low to medium protein. You are probably best doing high protein, low carb and moderate fat, especially working out like you do.
It seems that awareness of what one’s intake is, whether carbs or protein or fat or calories or gluten or sodium, is a large part of the battle.
Even if you’re not doing hardcore diet of any kind, if you’re paying attention to what you’re eating, you will eat healthier. In my experience anyway.
I agree and look around the table to decide what I’ll have for that meal, always too much and some needs to go back to the refrig and get back in line.

Yep. The real benefit of limiting certain macros is the ability to dial in your diet to what works best for you.
It’s why when people go from a shit diet to whatever (vegan, keto, carnivore, etc.) they almost universally do exceptionally well. Seeking out the best long-term solution requires more nuance.
Over the years, I find that I do best with a lower carb intake. I’m trying now to up my protein to a particular level and kind of let the carbs and fat fall where they will. I don’t necessarily want to be so dogmatic.
That’s me, too. As go the carbs goes the scale. High fat knocks down the hunger. High protein ups the energy level.

I had a real bad one once. They gave me a list of foods I could eat and it was nothing I’d want to eat. I ignored it and just suffered for a few years. Then I tried Tagamet ( which was fairly new at the time and script only) it fixed me one hundred percent in a matter of weeks. I still get bouts, but now the tagamet is OTC.

I was off for a couple weeks, sitting in my deer stand, pretending that I was burning calories ’cause I was outside and it was sort of cold. Started back on a treadmill walk and some lighter machine exercises. A guy doesn’t want to just get right back in and overdue it, right?
Only a 1 lb weight gain after the 2 weeks plus off so I’m ready to get serious , well moderately serious, OK, OK, in my head its exercise. Fool myself everyday and I’ll talk like Bush Junior.
I just don’t have a lot to do, other than some exercise and try to eat modestly. Bring in fire wood every other day or so but that doesn’t take too long.
Winter is not bad at this point. Cleaning up the bee equipment, getting ready for next year.

Well, he’s been essentially re-plumbed. 5 or 6 years ago he had a 4X bypass, not long after having 1 carotid roto-rooter’d clear. Its was 99% blocked. Then, a host of stents in some abdominal arteries. So my theory is that, with all that blood flowing freely to places it couldn’t previously, no doubt he DOES feel better than he has in 25 years.

Ugh, I did a leg and squat heavy workout earlier this week, tiring but good, and followed it with a slightly warmer than usual shower. BAD! Hot water can shock the MS body into a flareup, and so I have been dealing with that all week. So it goes. Low energy, low drive.
We had friends over for T-day +1 and ate well, drank OK (Dragons Milk Stout is meh, I don’t get the appeal of most porters), and am now contemplating the X-mas lights. Or, conversely, staying in and shit-posting while working on my furniture resto project.
Christmas light show is fleeting; shit posting is forever.

My department has a much higher happiness level than others just because we are still meeting at the office and working with actual hardware build and test. Lots of voluntary resignations among some of our neighboring departments.
The resignations, which are mostly people under 40 who haven’t been through adverse work situations before, are the result of worry and anxiety about what the future holds.
The quitting and going to a new job restores their sense of control over their lives. Pretty basic psychology, but most managers are uncaring dicks who don’t bother empathizing with what’s on the minds of their staff.
Worrying is a waste of imagination.
I want to keep my team using their imaginations to solve technical problems that give them a sense of accomplishment.

What is the consensus regarding low (200 deg, maybe?) preheat for a few minutes before the sear? (looking for medium rare, but not raw in the middle) Is that done? Will it have some sort of adverse effect on tenderness? I hardly ever buy quality cuts of meat to cook at home, because I don’t want to ruin it.
I let the cut rest on the counter and come up to room temperature before cooking it. Then, I’ll fry it in butter,evoo for 3 minutes a side and then into a 415°F oven for 5 minutes. That’s pretty rare steak. You may try 8 mins in the oven.
I don’t cook anything straight from the fridge.

I got one of those stabby things with dozens of blades to tenderize meats. I can’t wait to try it out. I’ve tossed more than a couple cheap pieces of meat that came out like a block of wood.

Minimum steak thickness for me is 1.5. 1.25 if it’s a really good price. Thickness can go all the way to 3 though, as long as the “flats” are longer than the sides. I slow side smoke smoke my steaks with charcoal and mesquite chips because I don’t have a place to burn a nice log in. Like this.
After 3 rounds of smoking on each side, I begin the sear process. About 90 seconds on each side directly over the coals, holding it steady with tongs. Crispy on the outside, smoky beefy on the inside. Try it with Filet Mignon. No bacon needed.
They’re looking for their steaks black and blue (black on the outside, blue on the inside). I’m a fan of rare.
I take my cast iron skillet, preheat it to 495 F (or about 5 degrees below the smoke point for the oil you’re using), steak rests with salt and pepper on it for about an hour before cooking, then 30 seconds on each side for a sear, and 1-3 minutes (depending on the thickness of the steak) on each side in the 495 F oven in the skillet for each side.
Another option is to Sous Vide it.
Sous vide, a minute or so on the infrared burner on the grill until you get the char you want.
I go cast iron skillet turned up to 11 on the quick boil burner on my gas cook top, but it’s all good. With Sous vide, you also have to remember to dry the meat before searing it.
Steak is easy. Put it on a lit grill, drink a beer, flip it, drink another beer. Eat it with a third beer.
If it comes out wrong, you aren’t drinking beer right.

That’s nonsense. I’ve worked a broiler. At a restaurant, steaks need to be kept cold. Not only a good idea, it’s the law. The grill is at an angle above the fire, so well done goes to the back where it’s higher up, and rare goes to the front where it’s closer to the heat.
If your rare comes out blue, then the heat is too high. Either turn it down, or move the steak farther away.

That’s fine, but the difference between refrigerator and room temperature is only around 30 degrees F. A big difference for bacteria over time, but not much of difference in starting temperature when quickly cooking things to order.

That’s true, but I don’t see how that would make a difference here, unless you were trying to cook more than one kind of done with one burner.
Everything I’ve read suggests that the “let steaks get to room temperature” thing is a myth. Apparently a three-quarter inch steak would take about an hour to get to room temperature and you don’t want to leave it out for that long.
Apparently it’s perfectly okay to grill/broil/pan fry them while they are still frozen. It just takes longer to cook, but then you’re not spending time defrosting them either.

It works. I put steaks on top rack until within 20 degrees of target, the sear on main rack of grill, about 2 mins per side, until target.
Lifehack- last week my Kroger had BOGO beef roasts. I got a packet of that Campbell’s “slow cooker” goo and dumped it an the meat in my stove-top pressure cooker for 30 minutes with some beef broth. Let the pressure release, added veggies and ran it for another 10 minutes.
End result? 1 very happy Jugsy.

I remember when he was coach here.
I workout in my unheated garage year around – provided the temp stays above 15F. For winter I wear thin running gloves, and then put on my weightlifting gloves.
I also wear a beater winter jacket that usually comes off after I’m warmed up. Hat, etc. It certainly is no fun but, I found, if you don’t keep to a regular workout routine it is too easy to slack off.
We looked at heating the garage but decided the really chilly winter months aren’t long enough to warrant the cost. The little electric heater I have isn’t enough to warm up a garage without insulation so I rarely use it. The heat is so paltry that it is only good as a quick hand warmer.

I am no air-oligist and have never tested my airspace for O2 levels but my thinking any place that has a garage door for a door will get sufficient fresh air. Those things aren’t exactly air tight. I realized yesterday that I apparently made some chest and arms gains, as I don’t fit in my old shirts anymore. My ruse to have a physical job instead of sitting on it apparently works.
I’m happy about the gym owners fighting back. The girls in this house take dance class. The owner is down from 200 subscriptions to about 60. 10 years of her hard work is just fading away like that. Yes, if she wasn’t politized before she now is and is part of every protest against the lockdowns there is.
We went to get the Christmas tree today. I’d say that 75% to 90% of people were wearing masks.
Outside. Not in a line up, in the middle of a tree field. In windy conditions. And we live in a rural area, so it’s not some stupid urbanites with their stupid ideas.
At this point, I don’t think there is much we can do. People want to be lead, sheep want to be flocked, most of our societies have daddy issues and need somebody else to make decisions for them, and will abide by them as long as they get told they are doing the good thing.
Other than that we got a Christmas tree, which is nice, and when one of the kid working there mentioned the masks to us, we just stepped away. Which is what you should do from any cretin still believing in that bullshit.

My wife cut up a pumpkin today. Not sure what’s she’s going to do with it, but she roasted all the seeds in the oven. I can’t stop eating these things, they’re addicting.

I seek advice on a home testing kit for food sensitivities.
I recently noticed greatly reduced joint pain and swelling and overall “improvement.” I think it might have coincided with my cooking low carb for my husband. It had the secondary effect of being casually low gluten.
I’m back to my regular eating in which i don’t pay attention to gluten. But the joint pain and other issues are back. I’m willing to do some experimenting to see if there is a correlation.
BUT I found that some food sensitivities can be tested at home, or a mail back test anyway. And they accept HSA as payment. I have $1000 HSA left that will vaporize January 1.
Any recommendations or experiences pro or con?

I got a bike trainer and an app that stimulates terrain. This week I “rode” along Lake Como in Italy and in the Andes in Chile up to the Argentine border.
Today in real life we rode the 17 Mile Drive in Carmel. Perfect weather. We sure could use some rain, but damn this weather is beautiful.
I’ve got several friends who do the “real life” digital trainers. I can’t rationalize me spending the money knowing my relationship with trainers.
We have the “poor man’s” version of those. A spin bike and a TV with a roku mounted on the wall. Don’t tell my wife but I got a cadence sensor for her for Christmas.
I’ve got a stationary (recumbent), and a trainer I can hook one of my real bikes up to. I can’t stand time on them. It’s just so tedious to me. At least at the spin classes, I get stats and have people to compete against.
It’s not a human trainer. I don’t want to deal with a person either. It’s a Wahoo trainer and I’m using the Rouvy app. It shows video of the route and the trainer gets harder when going uphill and easier when going downhill. It’s the only way I can motivate myself to ride indoors.

During the pandemic, membership declined by over 60 percent, said co-owner Tyler Quinn. The business received federal Paycheck Protection Program loans, enabling most of its staff to stay on for a while, and the landlords adjusted rent payments. But it still wasn’t enough.
“It’s terribly disappointing,” Quinn said. “This was designated as a really aggressive growth year for us. We’re going to be delayed if not completely derailed on our long-term vision.”
Two of his seven locations, one on Tennyson Street and one in Minneapolis, were forced to close during the pandemic. Quinn and his team were discouraged by the lack of leadership from all levels of government to help navigate the crisis.
“It doesn’t feel like there’s anybody out there thinking, ‘How do we support these small businesses?’” he said.

Many people have heard of the Navajo code talkers, but there were code talkers from other tribes. One was Clarence Wolf Guts (what a badass name!) a Lakota from the Black Hills.

Clarence Eugene Wolf Guts was born on February 26, 1924, on the Rosebud Reservation in South Dakota, where his grandfather, Hawk Ghost, and grandmother, Hazel Medicine Owl, taught him the Lakota language. This proved to be an extremely valuable skill that allowed him to be very influential and unique during WWII. On June 17, 1942, at the age of 18, Clarence left the eleventh grade with his cousin to enlist in the United States Army. Before he was accepted into the army he had to pass his physical. This could have been a problem because he had a perforated eardrum from a bug that his grandmother pulled out of his ear as a child. Although this could have stopped him from joining, the U.S. army accepted him because they needed all the men they could get. Clarence was sent to training in places all across the country. While in basic training in Alabama, a captain approached Clarence and asked him if he spoke “Indian” and when Clarence told him yes the captain found a new duty for him. The captain taught Clarence proper military etiquette and told him to stand two feet from the general, salute, and say his name, rank and serial number, but when Clarence met Major General Paul Mueller this etiquette was not needed. The general poured them a whiskey and asked to speak casually man-to-man, which is where the general realized he “hit the jackpot.” Clarence became Major General Paul Mueller’s personal code talker as they navigated through the Pacific on their way to Japan. Code talkers were given two bodyguards for extra protection against the Japanese, who wanted to capture them in order to decipher the code. Other code talkers claim that the bodyguards were ordered to shoot the code talkers before the enemy ever captured them, in order to preserve the code. Clarence used Lakota language to create messages so complex that only other Lakota code talkers could understand them, and the enemy was never able to decipher the messages. Clarence described the war as “hell” and while at service they “drank quite a bit [because] it was easier to take another man’s life” that way.

A man beating and choking his estranged girlfriend in a Southern California home was killed by the woman’s mother and sister Saturday as they tried to rescue her, authorities said.
The man, whose name was not immediately released, was pronounced dead at the South Pasadena home, the Los Angeles County Sheriff’s Department said in a news release.

So, I stopped at a 7-11 on the way to the skatepark. The guy in front of me turned around and freaked right out. He powerwalked down to the end of the aisle and just stood there until it was his turn. Then, He yelled something unintelligible to the clerk. She turned to me and motioned for me to put the mask over my nose. When I figured it out, I put the mask up and said, ” Sorry, sometimes I forget to pretend hard enough.” Dude went right off the deep end. Started pacing and muttering about ” pretending? PRETENDING?” “I can’t believe he said that!” “I’m not pretending, who pretends?” etc.
The guys behind me were saying that dude is whacked, but the cashier lady said to me, ” No, he’s a good customer!” SO I said, “Hey, I’ll do whatever calms him down, if I can figure out what that is.” Dude grabbed his 12 pack of modelo and stormed out of the hyperventilating and just paced in front of his car for a while. Guys behind were laughing uproariously. That’s the first scary covidian I’ve encountered. Kind of freaked me out.
