Biscuit-making eludes me. I use all the right ingredients and do it the way it says, but they still come out hard as bricks and dry as the Sahara.
She’s watched many a YT video for sure. All I know is there is a trick with the slicing of the butter, and she uses sour cream instead of buttermilk.
Ohhhhhh, I would NEVER have thought of that, and buttermilk is just liquid sour cream. What can I say, I can drink buttermilk straight.
The slicing the butter trick sounds right. It’s a thing in pie crust making.
I freeze butter and then grate it directly into the flour. Learned this trick from some show which showed how some café famous for its biscuits did it. Works a treat.
Hmmm, my biscuits are good, but wondering if both the sour cream and grated butter may just raise them to next level. Maybe I’ll try one trick at a time and then combine the tricknowledgy to see what works best. Either way I’m intrigued.

225 for the pork butt but I transferred to the oven at that temp. Restarting the smoker now for the ribs and that will run at 250ish and once chicken goes on up to 300.

I don’t need a horrorscope for the future. Apparently my boss has decided not to fight the mandate and will leave a month from tomorrow. Found out from a coworker late Friday and it was too late to get it get from the horse’s mouth. Guess my boss doesn’t want to do the firing for anyone who doesn’t have an approved accommodation request (which I think will ultimately be meaningless in companies that are mandate cultists; another coworker got their submission received with HR saying they’re going to schedule an interview on it).
Good on your boss. Although it would be more powerful if he/she refused and forced the company to fire him/her instead, I understand the desire to leave on one’s own terms and not have a termination for cause following one around.
He’s at the end of his career and will retire to spend time with his grandkids. I think his timing is more about not having to fire someone else. One of the things he absolutely hates. Even layoffs and he’s had to do a few rounds of those over the years.
I believe that in any company mandating the vax, asking for an exemption from HR is just putting yourself on the next-to-be-fired list.
One of our plant managers was shown the door after he wasn’t enforcing mask mandates at his facility. A corporate EHS person visited the plant and complained. Never mind that all the employees at the plant supported the manager and didn’t want to mask up…
Probably the right thing to do, legally speaking for the company, but what an asshole the EHS person was. They’re no longer at the company either…
Went to the eye doc yesterday, which is in a strip mall. There is an insurance company next door and they had a huge sign that said MASKS REQUIRED.
Eye doc had a small sign that said “Masks recommended”.
Nobody there was masked, and they had taken away all the spacers between the reception desk and the public. I told them thank you as I left.
I’ve switched eye doctors to an eye doctor that doesn’t require masks. First appointment is this Thursday.
Next is the dentist. I need to get some recommendations.
The shame of it is, I actually like both my current dentist and my old eye doctor. But if I can find an alternative that doesn’t require face diapers, I’m taking it.

I’m off the job market now as I found a place to land. However, I did join RedBalloon just before I had the interviews that led to my current job. There wasn’t much up there, but I they are growing. There is also a no-vax job board on Gab. They’re out there.

Sounds about right for this week. One of my reports has been fucking up and pissing off a lot of people. After being provided relatively gentle feedback from myself to get performance back on track, said report went behind my back for a meeting with my boss to complain about receiving feedback. Boss is highly pissed at the report for doing this and so am I.
I stuck my professional neck out quite a bit and it sucks to get backstabbed like that. The pain this week will be deciding what things look like moving forward.

The bottom end of the RV market seems to be the new homeless encampment tent. I see hundreds of them, broke down and sporting out-of-state license plates at every wide spot on the road in any somewhat lenient town in Oregon. Portland is filthy with them, Eugene is getting there, and Salem is overrun now.
I have the feeling this is actually pushing the market up in cost.

We recently switched from Verizon to AT&T for our wireless. Mostly because they have been investing in more coverage near us and we live in an are where Verizon has limited coverage. Not to mention Verizon’s terrible customer service. It is hard to believe anyone in wireless could outdo them in providing shitty customer service. Well AT&T does just that. Throw in the horribly deceptive bait and switch (which effectively tripled our monthly bill) and it is just one more example of me wanting out of modern society. Fuck these huge corporations. Fuck globalization. Fuck the government that makes it happen. Fuck the people who cheer it on and want to see me destroyed. Fuck it all. It’s not worth the fucking headache. Every day provides another reason to sell everything and start a “homestead” (I don’t like the term, but it gets the point across) in the middle of nowhere Wyoming. Fuck this shitty world our “betters” and “technology” have created. I want no part of it. All it does is suck the life from you and leave a hollow shell. It’s becoming harder and harder to find peace in this life.

We have had AT&T for many years now. We’ve been happy with the service and cell coverage.

But I think the overarching theme is that tech has brought us no peace, no joy. Just contention and more things to be looked after.
Coverage is fine. Website sucks. Difficult to talk to a person on the phone unless you call an ATT store. Service personnel made several mistakes when we signed up that we’re still trying to fix. My wife drove to the nearest town (an hour away) today just to talk to a real person at the store and figure out why the monthly cost they told us at the time has ballooned. Yeah, yeah read the contract….good luck figuring that out. Yes, it’s less about this particular company and more about every medium to large corp out there. I just want value for my money. In lieu of that, the only way to win is not to play.

I’ll go even farther than that. All I want is a straightforward transaction where the costs and the metes and bounds of the product/service are presented in plain language for my inspection prior to purchase.

I’ve also been following landwatch and others. I noticed there are sites specifically catering to for sale by owner which is intriguing, along with contract for deed to avoid mortgages with a bank. Finding something that checks all the boxes we want is not easy, especially if I prefer to not spend all of my retirement fund on property.

In more exciting OT news. I’m making my first pot of chili using Serrano peppers instead of Jalapeno peppers. Why? Because I have Serrano peppers and no Jalapenos. So I just ate 2 of them, and the heat is about the same as the Jalapenos I grow in containers, which is way hotter than the ones you can buy in the produce section of supermarkets. But not too hot. I think I can work with these. So the entire world is on the edge of their seats awaiting the results. I don’t really intend to put the world on hold like that, it just happens all of the time.
It’s Halloween and I’m still picking peppers here. The ghosts and the Scotch Brain really pushed out some fruit at the end of the season.
The Ghengis Khan has been picked clean and retired. Still a couple peppers left on the chocolates, but they’re winding down.
Those are suicide peppers. I can’t work with those. Well, I guess I could if I could get used to the right amount to use for cooking. The only peppers I even have in my seeds collection for next spring that are hotter than the Serrano or Jalapeno is Lemon peppers and I guess those are somewhat hotter than the Serrano or maybe quite a bit hotter, but still not suicide peppers like the ones you grow.
